Larry, a native New Yorker, loved baking chocolate chip cookies as a kid, but developed a wheat allergy. Kumiko loves tasting cookies, but cannot eat dairy products. Larry met Kumiko in California, where we enjoyed many gluten-free and dairy-free treats. After we relocating to Kumamoto, we discovered a lack of gluten-free dairy-free cookies and yet many locals faced similar food sensitivities. Determined, Larry embarked on a mission to craft a unique cookie free from major allergens. On April 23, 2022, his journey began. Today, Experiment #146, also known as The Roasty Chocolate Chip cookie, stands out in the sea of cookies.
These cookies boast organic vegan chocolate chips from a fair-trade Peruvian source, paired with premium Madagascar Bourbon vanilla extract. Diverging from tradition, we use sake lees and Shio Koji for an umami twist—take a moment after biting to savor this depth. Organic virgin coconut oil ensures a crispy texture, while a special blend of mostly organic starches—corn, tapioca, potato, and rice flours—delivers a delightful balance of substance and melt-in-the-mouth experience.

Ingredients: Organic Vegan Chocolate Chips, Organic Virgin Coconut Oil, Organic Corn Starch, Organic Sugar, Rice Flour, Tapioca Flour, Brown Rice Flour, Potato Starch, Organic Molasses, Rice Bran Oil, Shio Koji, Pure Vanilla Extract, Sake Lees, Rice Vinegar, Psyllium, Salt.
We intentionally do not use any of the 28 major food allergens in our cookies. No Wheat, butter, eggs, milk, soy, peanuts, tree nuts, buckwheat, sesame, or even abalone, that we hope is not in any cookies.
While we are starting our commercial operations, we do share a production kitchen with others. While we diligently clean, use independent mixing equipment and containers, it is possible for some trace amounts of allergens to end up in our cookies.
We do in-house batch test for gluten down to 20 ppm using automated test equipment.
